The fiat prices aren't refreshed in real-time, they are refreshed following several rules based on the asset type.

E.g. the SAFE token price is fetched more often than each chain native coins (ETH, MATIC, xDAI, etc.), and these are fetched more often than regular ERC-20 token prices.
